Lazy Perogies
From the kitchen of Gisele Neil
Ingredients
9 lasagne noodles
2 cups of cottage cheese
1 egg
¼ tsp of onion salt
3 to 4 cups of mashed potatoes
shredded old cheddar cheese
¼ tsp of salt and pepper
½ cup of butter
1 cup of chopped onions
Directions
Cook 9 lasagne noodles
Mix 2 cups of cottage cheese, 1 egg and ¼ tsp of onion salt
Cook 3 to 4 cups of mashed potatoes
Combine potatoes with 2 cups of shredded old cheddar cheese and ¼ tsp of salt and pepper
Place 3 noodles in the bottom of a greased 9 X 13 casserole dish
Layer with cottage cheese mixture
Place 3 noodles over the cheese mixture
Layer with potato cheese mixture
Place 3 remaining noodles on top
Sauté 1 cup of chopped onions in ½ cup of melted butter and add to the top layer
Bake covered for 20 minutes at 350F
Remove cover and bake for another 10 to 15 minutes
Serve with sour cream
